Halloween Spooky Crispy Rice Treats - Nut-Safe & Vegan!!

Hello my silly sock puppets,

Another little vegan and nut safe recipe for Halloween for you.  This recipe calls for a nut-safe “peanut” butter-type spread and these are available in all good supermarkets and health food stores.

Some of them are really thick, compared to the regular nut butter varieties, so it may be a bit of trial and error to get the right sticky gooey consistency that you want to cover the rice cereal.  Even if you add a tablespoon of your dairy-free spread to the mixture, this will help loosen it a bit.

This is a great recipe for getting the kids involved in.  Adults can use the cooker to melt the goo but the kids can mix and mould until their little hearts are content (or your kitchen is a mess – whichever comes first).

If you want you can add dried fruits to these to make them (slightly) less sugar intense but hey, Halloween is only once a year...

You really can’t go wrong with these crispy, crunchy snacks, especially since you can mould them into any shapes you like. Try pressing them into witch’s hats or pumpkins, or just dip them into melted vegan white chocolate and decorate with a pair of dark chocolate chips as eyes for ghostly munch-ables.

3 cups crisp rice cereal
2 teaspoons vanilla extract
3/4 cup smooth salted nut-safe “peanut” butter
1/2 cup golden syrup

Melt the “nut” butter, vanilla extract, and golden syrup in a saucepan until the mixture is nice and runny.  
Add a few drops of food colouring to make the cereal orange, green, or yellow (or whatever fiendishly scary you desire!).
Pour the cereal into a large bowl, and then drizzle the liquid over it, making sure that all the crisps are coated well.
Form into whatever shapes you like, then place on a baking sheet that’s covered with grease-proof or baking paper.
Place the sheet in a freezer for about an hour to set, and then store in the fridge or other cool, dry place until you’re ready to serve them to visiting goblins.

So there you have it.  Quick, easy and fun to make (and eat).
